Simply think about it. Water never sticks to an extremely large sphere in a homogenous fashion. Because water molecules are attracted to each other, they tend to bead up or form droplets when in a liquid state. This attraction creates a property in liquids known as surface tension. The amount of energy necessary to expand the surface area of such a liquid would be defined as surface tension. The molecules inside of a liquid are pulled equally in all directions by their attraction to the other molecules in the liquid.
Additionally, if Gravity was strong enough (by the way, Gravity is supposed to be one of the weakest forces) to hold trillions and trillions of tons of ocean water to a spinning Earth, then every creature on Earth would be smashed to Earth’s surface in a homogenous layer of death.

Surface tension and viscosity are two properties of fluids which are related to the cohesion of the molecules in the fluid. Viscosity is the resistance of a substance to flow, and surface tension is a property of liquids such that their surfaces behave like a thin, elastic film. In this video, the water does not stick to a sphere in the same homogeneous fashion that it is supposed to stick to a spinning Earth. To the contrary, the water beads up in the way expected of water to bead when applied to a small surface area. In other words, this video does not illustrate the force of imaginary Gravity on the waters of The Earth at all. It only illustrates the principles of surface tension and viscosity.
